Soy Honey Sriracha Salmon

Ingredients:

  • 1 salmon piece (per person) I only buy Atlantic, skin pealed Salmon from Costco

  • 2 tbsp soy sauce

  • 2 tbs honey

  • 2 tbs sriracha sauce (more if you want spicy)

  • 2 tbs rice wine vinegar

  • 1 tsp olive oil

  • asparagus

  • yellow skin potatoes

  • 2 tsp minced garlic

  • salt & pepper

  • Italian seasoning

  • 1/3 cup milk


Directions:

  1. Boil hot water with dash of salt (or two waters if making homemade mashed potatoes)

  2. Trim ends off of Asparagus (TIP: bend the ends of the asparagus and each steam will break where it needed to be trimmed)

  3. I add my 1/2 cut potatoes to the water right away... no need to wait for it to be boiling.

  4. On a cutting board salt, pepper, & Italian seasoning both sides of each salmon

  5. In a small bowl add soy sauce, honey, rice wine vinegar, garlic, and sriracha (all can be adjusted to taste)

  6. Once the water is at a rapid boil dump trimmed asparagus into boiling water

  7. Oil a nonstick pan (REALLY IMPORTANT ITS NONSTICK) on medium

  8. Test the heat with the edge of your salmon, when roaring hot sear each sides for 3-4ish minutes. Keep on medium and alternate sides until outside is golden brown (make sure heat is not too high or it will start to burn outside but inside will be raw)

  9. While the salmon is cooking, pour the mixed sauce into a small pan on low. Bring to a boil then simmer for 2 mins.

  10. Make sure to keep an eye out for the Asparagus, when tender, take out and baked @425 for 5 mins to get a little crispy

  11. Mashed potatoes you can make from scratch or buy a package. If making from scratch this should be the 1st step with the boiling water of the asparagus.

  12. Once potatoes are super soft (TEST: take a fork and be able to go through it easily) add the milk and salt and pepper for taste.

  13. For the beautiful plating, first add the mashed potatoes

  14. Take out the asparagus and place on top of the mash

  15. Place the salmon on top of the asparagus and with a small spoon drizzle the soy sriracha sauce on top of your salmon (add as much sauce as you wish)!

  16. Enjoy!
