Ingredients:
2-3 lbs pork shoulder trimmed of excess fat
1 tablespoon olive oil
1/4 cup orange juice
2 tablespoons lime juice
2 bay leaves
1/2 red onion, chopped
2 Avocados
2 jalapenos
3 radishes
bundle of cilantro
your favorite bag of tortilla chips
Wet Spice Rub:
3 tablespoons olive oil
2 tablespoons tomato paste
1 tablespoon reduced sodium soy sauce
1/4 cup brown sugar, packed
1 tablespoon ground cumin
2 tsps EACH dried oregano, salt
1 tsp EACH chili powder, garlic powder, onion powder
1/2 tsp EACH smoked paprika, pepper 1/2-1 teaspoon ground
chili pepper (optional for heat)
Homemade Queso:
2 Tbsp Unsalted Butter
2 Tbsp Unsalted Butter
2 Tbsp All Purpose Flour
⅓-1/2 Cup Milk
2 Oz Cream Cheese
1 ½ Cups Pepper Jack Cheese
2 Tbsp Diced Tomatoes with Green Chilies
½ Tsp Garlic Powder
1 Tsp Onion Powder
½ Tsp Chili Powder
¼ Tsp Cumin
Directions 1. Heat 1 tablespoon olive oil over high heat in a large skillet. Using tongs sear pork on all sides until lightly browned. Transfer pork to cutting board until cool enough to handle 2. Meanwhile, whisk together all of the Wet Spice Rub ingredients in a medium bowl. When pork is cool enough, massage Wet Spice Rub evenly all over then transfer pork to slow cooker. 3. Add orange juice, lime juice, 2 bay leaves to slow cooker. Cook on LOW for 8 to 10 hours or on high for 5-6 hours OR until pork is fall apart tender and easily shreds with a fork.
4. Preheat oven to 425.
5. While oven is preheating start making the queso. In a small saucepan add the butter and heat over medium heat until melted. Add in the flour and stir until combined, about 1 minute. Add the milk and whisk to avoid clumps and slightly thickened, about 3-5 minutes.
6. Slowly add in both cheeses and continuously stir until melted.* Finally, add in remaining ingredients and stir until combined. Keep warm until ready to use.
7. Once pork is complete, pull out the shredded pork and set aside.
8. Put down a silicon baking sheet, pour entire bag of chips on the sheet pan and beginning the layering.
9. Add as much pork
to the nachos as you would like. Slice up two jalapenos, slice up 3 radish and distribute evenly. Top with homemade queso. Bake for 10 mins!
10. Remove from oven, add sliced avocado, fresh cilantro and more queso...enjoy!
