Spicy Egg Sandwhich

Ingredients
Egg Sandwhich:
1 Everything bagels sliced
2 medium eggs
1 oz cheese or 1 slice of cheese
3-4 slices bacon (add more if you like)
1 large haas avocados
1 tsp salt
1tsp pepper
Sriracha Mayo sauce:
2 tbsp mayo
1 tsp sriracha sauce
1/4 tsp chili powder
Instructions:
1. Begin cooking your bacon. While that is happening slice up your avocado into thin slices
2. Make the sauce: Add about 2 tbsp mayo to 1 tsp sriracha (add more sriracha if you want more heat)
3. While the bacon is about halfway done, begin to cook your eggs. You'll need to grease up the pan so the eggs don't stick. I use Pam nonstick olive oil spray
4. Break the two eggs, do not break the yolk (salt and pepper the eggs)
5. Begin to toast your bagels. If you have a toaster drop in now, if not make sure you toast for 3 mins in the oven with the bacon
6. After egg has cooked for 1 minute, add cheese, place a lid on top to melt the cheese
7. All your bacon and bagels should be ready! Set aside and let cool
8. Check on eggs, should be done, I like mine over medium (runny yolk).
9. Now time to assemble. Take bottom of bagel, place a little of the sauce, drop the two eggs on top, add 3 slices of bacon, add 3 slices of avocados, and spread more sauce on top part of bagel.
10. Cut in half and watch it ooze, Enjoy!
